How to Make Instant Pot Dak Baeksuk

Ingredients

  • 1 whole chicken (about 1.2-1.5kg)
  • 1 green onion (sliced)
  • 10 cloves garlic (whole)
  • 1 slice ginger (sliced)
  • 6 cups water
  • Salt to taste
  • Black pepper to taste
  • 1 tbsp soy sauce (optional, for seasoning)
  • 1 tbsp sesame oil (optional, for added richness)
  • 1 ginseng root (optional, for extra health benefits)
  • 1/4 cup glutinous rice (optional, adds richness to the broth)

Instructions

1️⃣ Prepare the Chicken

  1. Clean the chicken by removing the innards and rinsing it under cold water. Pat it dry with a paper towel.
  2. If using glutinous rice, rinse it well.
  3. If adding ginseng, clean it thoroughly.

2️⃣ Add Ingredients to the Instant Pot

  1. Place the chicken, green onion, garlic, ginger, and ginseng (optional) into the Instant Pot.
  2. Add the rinsed glutinous rice (optional), then pour in 6 cups of water. Season with salt and black pepper. You can also add soy sauce or sesame oil for extra flavor.

3️⃣ Pressure Cook

  1. Close the Instant Pot lid and set the vent to Sealing.
  2. Set the Instant Pot to Manual (High Pressure) and cook for 30 minutes.
  3. After the cooking time is up, allow the Instant Pot to naturally release pressure for about 10 minutes, then do a quick release to remove any remaining pressure.

4️⃣ Final Touches and Serve

  1. Remove the chicken and check the broth for flavor. Adjust the seasoning with salt or pepper as needed.
  2. Carve the chicken into pieces and serve with the broth in bowls.

Tips:

  • Adding glutinous rice enhances the broth’s flavor, making it rich and creamy.
  • Ginseng is optional but adds a health boost and unique flavor. You can skip it if you prefer.
  • Be careful not to overcook the chicken to keep it tender and moist. The pressure cooking time should be sufficient.
  • Soy sauce adds depth to the broth, and sesame oil gives a rich, nutty flavor.

This Instant Pot Dak Baeksuk is a wholesome, nutritious dish that will keep you warm and energized. Perfect for a comforting meal that’s quick to prepare! 😋
