Instant Pot Chicken Tikka Masala 🍛
This creamy, spiced chicken tikka masala is a popular Indian dish made with tender chicken in a rich, spiced tomato sauce. Perfect with naan or rice!
Ingredients
- 2 lbs chicken breast or thighs, cut into bite-sized pieces
- 2 tbsp vegetable oil
- 1 onion, diced
- 4 cloves garlic, minced
- 1-inch piece of ginger, minced
- 1 can (14 oz) crushed tomatoes
- 1 cup heavy cream or coconut milk
- 2 tbsp tomato paste
- 1 tbsp garam masala
- 1 tbsp ground cumin
- 1 tbsp ground coriander
- 1 tsp turmeric
- 1 tsp paprika
- 1 tsp chili powder (adjust to spice level)
- 1 tsp salt (to taste)
- ½ tsp black pepper
- 1 tbsp lemon juice
- Fresh cilantro, chopped (for garnish)
For the Chicken Marinade:
- 1 cup plain yogurt
- 1 tbsp lemon juice
- 1 tbsp ground turmeric
- 1 tbsp ground cumin
- 1 tsp garam masala
- 1 tsp paprika
- 1 tsp ground coriander
- 1 tsp salt
Instructions
1️⃣ Marinate the Chicken
- In a bowl, mix yogurt, lemon juice, turmeric, cumin, garam masala, paprika, coriander, and salt.
- Add the chicken pieces and coat them well. Cover and refrigerate for at least 30 minutes (or overnight for more flavor).
2️⃣ Sauté the Aromatics
- Turn the Instant Pot to Sauté mode. Add vegetable oil.
- Add the diced onion and sauté for 2-3 minutes until soft.
- Stir in garlic and ginger and sauté for another minute.
3️⃣ Add the Spices & Tomatoes
- Add the garam masala, cumin, coriander, turmeric, paprika, chili powder, salt, and black pepper. Stir well to coat the onions.
- Add the crushed tomatoes and tomato paste, then stir.
4️⃣ Pressure Cook the Chicken
- Add the marinated chicken to the pot and stir to combine.
- Close the lid, set the valve to Sealing, and cook on High Pressure for 6 minutes.
- Let the pressure release naturally for 5 minutes, then do a quick release for the remaining pressure.
5️⃣ Make the Sauce
- Open the lid and stir in the heavy cream or coconut milk.
- Add lemon juice and stir again.
- Turn the pot to Sauté mode and simmer for 5 minutes to thicken the sauce.
6️⃣ Serve
- Garnish with chopped cilantro and serve hot with rice or naan.
Tips:
- If you prefer a spicier dish, increase the chili powder or add fresh chopped green chilies.
- You can use bone-in chicken thighs for a deeper flavor, but adjust the cooking time accordingly.
