 Instant Pot Pulled Pork 🍖

This fall-apart tender pulled pork is cooked in a savory, slightly smoky barbecue sauce. The Instant Pot makes it easy to prepare in just a couple of hours.



Ingredients

  • 3-4 lbs pork shoulder or butt (boneless)
  • 1 tbsp olive oil
  • 1 onion, diced
  • 4 cloves garlic, minced
  • 1 cup chicken broth
  • 1/2 cup apple cider vinegar
  • 1/2 cup BBQ sauce (plus more for serving)
  • 1 tbsp smoked paprika
  • 1 tbsp ground cumin
  • 1 tbsp brown sugar
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp chili powder
  • 1/2 tsp ground mustard
  • 1/2 tsp cayenne pepper (optional for heat)

For Serving

  • Burger buns or soft tortillas
  • Coleslaw (optional, for topping)

Instructions

1️⃣ Sauté the Aromatics

  1. Turn the Instant Pot to Sauté mode and heat olive oil.
  2. Add the diced onion and sauté for about 2 minutes until softened.
  3. Stir in the garlic and sauté for an additional 30 seconds.

2️⃣ Season the Pork

  1. In a small bowl, combine smoked paprika, cumin, brown sugar, salt, pepper, chili powder, mustard, and cayenne pepper.
  2. Rub the spice mixture all over the pork shoulder.

3️⃣ Pressure Cook the Pork

  1. Add the chicken broth and apple cider vinegar to the Instant Pot.
  2. Place the seasoned pork shoulder in the pot and secure the lid. Set the valve to Sealing.
  3. Cook on High Pressure for 60 minutes.
  4. Let the pressure release naturally for 10 minutes, then do a quick release for any remaining pressure.

4️⃣ Shred the Pork

  1. Remove the pork from the Instant Pot and place it on a cutting board.
  2. Use two forks to shred the pork into bite-sized pieces.

5️⃣ Mix with BBQ Sauce

  1. Return the shredded pork to the Instant Pot, and stir in the BBQ sauce until evenly coated.
  2. Simmer for 5-10 minutes on Sauté mode to allow the flavors to meld together.

6️⃣ Serve

  1. Serve the pulled pork on burger buns or in soft tortillas, and top with coleslaw if desired.

Tips:

  • You can use regular pork butt if you can’t find pork shoulder—just adjust the cooking time slightly.
  • For a smokier flavor, add liquid smoke or a smoked BBQ sauce.
  • Leftover pulled pork can be stored in the fridge for up to 3 days or frozen for later use.
