How to Make nstant Pot Galbi Jjim

Ingredients

  • 1 kg beef short ribs (about 2-3 servings)
  • 1 green onion (sliced)
  • 5-6 cloves garlic (minced)
  • 2-3 slices ginger (minced)
  • 1/4 cup soy sauce
  • 1 tbsp sugar
  • 1 tbsp sesame oil
  • 1 tsp gochugaru (optional)
  • 2 cups water
  • 2 tbsp mirin (or cooking wine)
  • 1/2 pear (grated)
  • A pinch of black pepper
  • Sesame seeds (optional)

Instructions

1️⃣ Prepare the Short Ribs

  1. Soak the beef short ribs in cold water for 30 minutes to remove the blood.
  2. Change the water once, then drain the ribs and pat them dry with a paper towel.

2️⃣ Prepare the Marinade

  1. In a large bowl, combine soy sauce, sugar, sesame oil, gochugaru (if using), mirin, grated pear, minced garlic, minced ginger, and a pinch of black pepper to make the marinade.

3️⃣ Add Ingredients to the Instant Pot

  1. Place the prepared short ribs into the Instant Pot and pour the marinade over them.
  2. Add the sliced green onion and pour in 2 cups of water.

4️⃣ Pressure Cook

  1. Close the Instant Pot lid and set the vent to Sealing.
  2. Set the Instant Pot to Manual (High Pressure) for 40 minutes.
  3. Once the cooking time is up, allow the Instant Pot to naturally release pressure for 10 minutes, then carefully do a quick release for any remaining pressure.

5️⃣ Final Touches and Serve

  1. Remove the galbi from the Instant Pot, taste, and adjust the seasoning if needed.
  2. Serve the galbi jjim on a plate and garnish with sesame seeds if desired.

Tips:

  • Adding pear helps to make the ribs more tender and adds a natural sweetness. If you don’t have pear, you can use apple as a substitute.
