Instant Pot Chashu (Japanese Braised Pork Belly) 🍖

Instant Pot Chashu is a tender and flavorful Japanese braised pork dish, commonly used as a topping for ramen. With the Instant Pot, you can make this melt-in-your-mouth chashu quickly and easily, perfect for your next ramen bowl or any other meal.


How to Make Instan Instant Pot Chashu 

Ingredients

  • 1kg pork belly or shoulder
  • 1/4 cup soy sauce
  • 2 tbsp sugar
  • 2 tbsp cooking sake
  • 2 tbsp mirin
  • 1 cup water
  • 4 cloves garlic (minced)
  • 1 slice ginger (minced)
  • 1 green onion (sliced)
  • 1 tbsp sesame oil
  • A pinch of black pepper
  • 1 tbsp cooking sake (optional)

Instructions

1️⃣ Prepare the Pork

  1. Trim the pork belly or shoulder to remove any excess fat.
  2. Roll the pork into a tight cylinder shape and tie it with kitchen twine. This will help the pork cook evenly and keep its shape.

2️⃣ Prepare the Marinade

  1. In a bowl, mix soy sauce, sugar, cooking sake, mirin, water, minced garlic, minced ginger, and green onion to create the marinade.

3️⃣ Add Ingredients to the Instant Pot

  1. Place the prepared pork into the Instant Pot and pour the marinade over it.
  2. Add sesame oil and a pinch of black pepper and mix everything together.

4️⃣ Pressure Cook

  1. Close the Instant Pot lid and set the vent to Sealing.
  2. Set the Instant Pot to Manual (High Pressure) and cook for 50 minutes.
  3. After the cooking time is up, let the Instant Pot naturally release pressure for about 10 minutes, then perform a quick release for any remaining pressure.

5️⃣ Final Touches and Serve

  1. Remove the chashu from the Instant Pot and carefully cut off the kitchen twine. Slice the pork into bite-sized pieces.
  2. Serve the chashu in a bowl, spooning some of the broth over the slices.

Tips:

  • Tying the pork helps it cook more evenly and keeps it in a nice shape.
  • Adjust the soy sauce and sugar ratio to make it sweeter or saltier according to your preference.
  • You can store leftover chashu in the fridge and use it for ramen, rice bowls, or sandwiches.
  • If you prefer a spicy version, you can add chili oil or chili flakes to the marinade.
