 Hearty Instant Pot Beef Stew 🍲

This rich and comforting beef stew is loaded with tender beef, potatoes, carrots, and a flavorful broth. Perfect for a cozy meal!



Ingredients

  • 2 lbs beef chuck, cut into 1-inch cubes
  • 1 tbsp olive oil
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 3 carrots, sliced
  • 3 potatoes, cubed
  • 3 cups beef broth
  • 2 tbsp tomato paste
  • 1 tbsp Worcestershire sauce
  • 1 tsp salt (adjust to taste)
  • ½ tsp black pepper
  • 1 tsp thyme (dried)
  • 1 tsp rosemary (dried)
  • 1 bay leaf
  • 1 tbsp cornstarch + 2 tbsp water (for thickening)

Instructions

1️⃣ Sauté the Beef & Aromatics

  1. Turn the Instant Pot to Sauté mode and add olive oil.
  2. Brown the beef cubes for 3–4 minutes until golden brown. Remove and set aside.
  3. Add diced onion and cook until soft (about 2 minutes).
  4. Stir in garlic and cook for another 30 seconds.

2️⃣ Add the Ingredients & Pressure Cook

  1. Return the beef to the pot.
  2. Stir in carrots, potatoes, tomato paste, Worcestershire sauce, beef broth, salt, pepper, thyme, rosemary, and bay leaf.
  3. Close the lid, set the valve to Sealing, and cook on High Pressure for 35 minutes.
  4. Let the pressure release naturally for 10 minutes, then do a quick release.

3️⃣ Thicken the Stew & Serve

  1. Turn the pot back to Sauté mode.
  2. Mix 1 tbsp cornstarch with 2 tbsp water, then stir into the stew. Let it simmer for 2–3 minutes until thickened.
  3. Remove the bay leaf and serve hot with bread or rice.

Optional Additions:

  • Add peas or mushrooms for extra flavor.
  • For a deeper taste, use red wine instead of some broth.
