Hearty Instant Pot Beef Stew 🍲
This rich and comforting beef stew is loaded with tender beef, potatoes, carrots, and a flavorful broth. Perfect for a cozy meal!
Ingredients
- 2 lbs beef chuck, cut into 1-inch cubes
- 1 tbsp olive oil
- 1 onion, diced
- 3 cloves garlic, minced
- 3 carrots, sliced
- 3 potatoes, cubed
- 3 cups beef broth
- 2 tbsp tomato paste
- 1 tbsp Worcestershire sauce
- 1 tsp salt (adjust to taste)
- ½ tsp black pepper
- 1 tsp thyme (dried)
- 1 tsp rosemary (dried)
- 1 bay leaf
- 1 tbsp cornstarch + 2 tbsp water (for thickening)
Instructions
1️⃣ Sauté the Beef & Aromatics
- Turn the Instant Pot to Sauté mode and add olive oil.
- Brown the beef cubes for 3–4 minutes until golden brown. Remove and set aside.
- Add diced onion and cook until soft (about 2 minutes).
- Stir in garlic and cook for another 30 seconds.
2️⃣ Add the Ingredients & Pressure Cook
- Return the beef to the pot.
- Stir in carrots, potatoes, tomato paste, Worcestershire sauce, beef broth, salt, pepper, thyme, rosemary, and bay leaf.
- Close the lid, set the valve to Sealing, and cook on High Pressure for 35 minutes.
- Let the pressure release naturally for 10 minutes, then do a quick release.
3️⃣ Thicken the Stew & Serve
- Turn the pot back to Sauté mode.
- Mix 1 tbsp cornstarch with 2 tbsp water, then stir into the stew. Let it simmer for 2–3 minutes until thickened.
- Remove the bay leaf and serve hot with bread or rice.
Optional Additions:
- Add peas or mushrooms for extra flavor.
- For a deeper taste, use red wine instead of some broth.
