A flavorful Shrimp Fried Rice is the perfect quick meal for busy nights. With succulent shrimp, fresh vegetables, and fluffy rice, this dish is savory, satisfying, and easy to prepare in just one pan.



🍽️ Ingredients (Serves 2-3)

  • 1 cup cooked shrimp (peeled and deveined)
  • 2 cups cooked rice (preferably cold)
  • 1/2 cup peas (frozen or fresh)
  • 1/4 cup diced carrots
  • 2 eggs (lightly beaten)
  • 1/4 cup green onions (chopped)
  • 2 tbsp soy sauce
  • 1 tbsp sesame oil
  • 1 tbsp vegetable oil
  • 2 cloves garlic (minced)
  • 1 tsp ginger (grated or minced)
  • Salt and pepper to taste

1. Prepare the Rice

  • If you’re using leftover rice, break up any clumps with a fork. Cold rice works best for fried rice as it’s less sticky and fries up better.

2. Cook the Shrimp

  • In a large skillet or wok, heat 1 tbsp vegetable oil over medium heat. Add the shrimp and cook until they turn pink and are fully cooked through, about 2-3 minutes. Remove shrimp from the skillet and set aside.

3. Scramble the Eggs

  • In the same skillet, add the beaten eggs and scramble them until fully cooked. Remove and set aside with the shrimp.

4. Sauté Vegetables

  • Add the sesame oil to the skillet. Add the garlic, ginger, peas, and diced carrots. Stir-fry for 2-3 minutes until the vegetables are tender and fragrant.

5. Combine Everything

  • Add the cold rice to the skillet with the vegetables. Stir well to combine. Pour in the soy sauce and toss to coat the rice evenly.

6. Add Shrimp and Eggs

  • Add the cooked shrimp and scrambled eggs back into the skillet. Stir everything together and cook for another 2-3 minutes to heat through.

7. Serve & Garnish

  • Taste and adjust seasoning with salt and pepper. Garnish with green onions and serve hot!
