Instant Pot Yogurt 🍦
Making your own yogurt at home is super simple with the Instant Pot! This recipe results in creamy, smooth yogurt that can be flavored with honey, fruit, or anything you like.
Ingredients
- 1/2 gallon (2 liters) whole milk (or 2% milk)
- 2 tablespoons plain yogurt with live active cultures (store-bought yogurt as a starter)
- 1/2 cup powdered milk (optional, for thicker yogurt)
Instructions
1️⃣ Heat the Milk
- Pour the milk into the Instant Pot and set the Instant Pot to Yogurt mode.
- Press the Adjust button until it reads Boil. This will heat the milk to around 180°F (82°C), which helps to denature the proteins, ensuring a smoother texture.
- Once the milk reaches the desired temperature, the Instant Pot will beep. Turn off the Instant Pot.
2️⃣ Cool the Milk
- Let the milk cool down to about 110°F (43°C). You can check the temperature by dipping a clean finger into the milk; it should feel warm but not hot.
- If you want to speed up the cooling process, you can place the pot in a cold water bath (water outside the pot, not inside) or let it sit for about 15 minutes.
3️⃣ Add the Yogurt Starter
- In a small bowl, mix the 2 tablespoons of plain yogurt with about 1/2 cup of milk. Stir until smooth.
- Pour this mixture into the cooled milk and stir gently to combine.
4️⃣ Incubate the Yogurt
- Place the lid back on the Instant Pot (no need to seal the valve) and set the Instant Pot to Yogurt mode again, this time adjusting to the Normal setting (for 8 hours).
- The yogurt will incubate for 8-10 hours, depending on how thick and tangy you want it. The longer you incubate, the thicker and tangier it will become.
5️⃣ Check and Refrigerate
- After the incubation period is complete, check the yogurt. It should be thickened and set. If it’s not thick enough for your liking, you can incubate it for a few more hours.
- Once it’s ready, transfer the yogurt to containers and refrigerate for at least 2 hours before serving. This helps the yogurt to set further.
Tips:
- Thicker yogurt: Adding powdered milk to the milk before heating it helps create a thicker consistency.
- Flavoring the yogurt: Once the yogurt is made, you can stir in honey, vanilla extract, or fruit for added flavor.
- Homemade yogurt with probiotics: Using a high-quality plain yogurt with live active cultures will ensure a good batch of yogurt.
