Instant Pot Risotto 🍚

This creamy and flavorful risotto is made effortlessly in your Instant Pot. You get all the creamy texture without the constant stirring, perfect for a comforting dinner!



Ingredients

  • 1 1/2 cups Arborio rice
  • 1 tbsp olive oil
  • 1 tbsp butter
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 4 cups chicken broth (or vegetable broth)
  • 1/2 cup dry white wine (optional)
  • 1/2 cup Parmesan cheese, grated
  • Salt and pepper, to taste
  • Fresh parsley, chopped (optional, for garnish)

Optional Add-ins (choose one or more):

  • 1/2 cup peas
  • 1/2 cup mushrooms, sliced
  • 1/2 cup spinach, chopped
  • 1/2 cup cooked chicken or shrimp

Instructions

1️⃣ Sauté the Aromatics

  1. Turn the Instant Pot to Sauté mode. Add olive oil and butter.
  2. Once the butter has melted, add the chopped onion and sauté for 3-4 minutes until the onion is translucent.
  3. Add the minced garlic and sauté for another 30 seconds until fragrant.

2️⃣ Toast the Rice

  1. Add the Arborio rice to the pot and stir for 1-2 minutes to lightly toast the rice. This step enhances the flavor and helps the rice absorb the liquids more effectively.

3️⃣ Add Liquids and Pressure Cook

  1. Pour in the chicken broth (or vegetable broth) and dry white wine (if using). Stir to combine.
  2. Close the lid of the Instant Pot and make sure the valve is set to Sealing.
  3. Cook on High Pressure for 6 minutes.
  4. Once the cooking time is done, do a quick release of the pressure.

4️⃣ Stir and Finish

  1. Open the lid and stir the risotto. Add the Parmesan cheese, and season with salt and pepper to taste.
  2. If you're adding any optional ingredients like peas, mushrooms, or spinach, stir them in now and let them cook in the residual heat.

5️⃣ Serve

  1. Spoon the risotto into bowls, garnish with fresh parsley, and enjoy!

Tips:

  • Use vegetable broth for a vegetarian version.
  • Dry white wine adds great flavor, but you can skip it if you prefer a non-alcoholic dish.
  • For a richer risotto, add a splash of heavy cream along with the Parmesan cheese.
  • If you like a thicker risotto, use a little less broth next time.
