Instant Pot Mac and Cheese 🧀
This creamy mac and cheese is made in your Instant Pot, cooking pasta and cheese sauce together for a smooth, rich, and comforting dish in just minutes.
Ingredients
- 1 lb elbow macaroni (about 4 cups)
- 4 cups water or chicken broth
- 1 tbsp butter
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 1/2 tsp mustard powder (optional)
- 2 cups sharp cheddar cheese, shredded
- 1 cup mozzarella cheese, shredded
- 1/2 cup heavy cream (or whole milk)
- 1/2 cup cream cheese, softened
For Topping (Optional):
- 1/2 cup panko breadcrumbs
- 2 tbsp butter, melted
Instructions
1️⃣ Cook the Pasta
- Add elbow macaroni, water (or chicken broth), butter, and salt to the Instant Pot.
- Close the lid and set the valve to Sealing.
- Cook on High Pressure for 4 minutes.
- Once the cooking time is done, do a quick release to release the pressure.
2️⃣ Make the Cheese Sauce
- Open the Instant Pot lid and stir the pasta.
- Add garlic powder, onion powder, black pepper, mustard powder (optional), and cream cheese. Stir until the cream cheese melts and is fully incorporated.
- Add the cheddar cheese and mozzarella cheese. Stir until the cheese is completely melted and the sauce is smooth.
- Pour in heavy cream and stir until everything is combined.
3️⃣ Optional Crunchy Topping
- In a small bowl, mix the panko breadcrumbs with the melted butter.
- If you want a crispy topping, set the Instant Pot to Sauté mode, sprinkle the breadcrumbs over the mac and cheese, and sauté for about 3-5 minutes until the topping is golden and crispy.
4️⃣ Serve
- Serve the creamy mac and cheese in bowls and enjoy!
Tips:
- For a spicier version, add a pinch of cayenne pepper or jalapeños.
- You can use half-and-half or milk if you prefer a lighter version instead of heavy cream.
