Instant Pot Chili 🌶️
This rich and savory chili is made with ground beef (or turkey), beans, tomatoes, and a perfect blend of spices. It’s a one-pot meal that’s easy to make and full of comfort!
Ingredients
- 1 lb ground beef (or ground turkey)
- 1 tbsp olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 1 red bell pepper, diced
- 1 can (14.5 oz) diced tomatoes
- 1 can (14.5 oz) kidney beans, drained and rinsed
- 1 can (14.5 oz) black beans, drained and rinsed
- 1 cup beef broth or water
- 2 tbsp tomato paste
- 1 tbsp chili powder
- 1 tsp ground cumin
- 1 tsp paprika
- 1/2 tsp cayenne pepper (optional, for extra heat)
- 1 tsp salt (to taste)
- 1/2 tsp black pepper
- 1/2 tsp oregano
- 1 tbsp sugar (optional, to balance acidity)
For Topping (Optional):
- Sour cream
- Shredded cheddar cheese
- Chopped green onions
- Fresh cilantro
Instructions
1️⃣ Sauté the Vegetables and Meat
- Turn the Instant Pot to Sauté mode and heat olive oil.
- Add diced onion, garlic, and red bell pepper to the pot. Sauté for 3-4 minutes until the vegetables soften.
- Add the ground beef (or ground turkey) and cook until browned, breaking it up into small pieces with a spoon. Drain any excess fat if necessary.
2️⃣ Add Spices and Liquids
- Stir in chili powder, ground cumin, paprika, cayenne pepper (optional), oregano, salt, and black pepper. Let the spices cook for about 1 minute to release their flavors.
- Add the tomato paste, diced tomatoes, kidney beans, black beans, and beef broth (or water). Stir everything together to combine.
3️⃣ Pressure Cook
- Secure the Instant Pot lid, making sure the valve is set to Sealing.
- Cook on High Pressure for 10 minutes.
- Once the cooking time is done, do a quick release of the pressure.
4️⃣ Adjust and Serve
- Open the lid and give the chili a good stir. Taste and adjust the seasoning, adding more salt, pepper, or chili powder if needed.
- If you want a thicker chili, you can set the Instant Pot to Sauté mode and let it simmer for 5-10 minutes to reduce the liquid.
5️⃣ Serve
- Ladle the chili into bowls and top with sour cream, shredded cheddar cheese, green onions, or fresh cilantro if desired. Serve with cornbread or crackers for an extra treat!
Tips:
- Add extra beans or vegetables like corn or zucchini for more texture.
- For a spicier chili, increase the amount of cayenne pepper or add a few chopped fresh jalapeños.
- You can slow cook the chili by using the Slow Cook function on the Instant Pot for a few hours if you prefer a longer cooking time.
