  • ½ teaspoon turmeric powder
  • 1 teaspoon garam masala
  • ½ teaspoon salt
  • A pinch of black pepper
  • 1 tablespoon lemon juice

🍚 Biryani Base

  • 1.5 cups basmati rice (soaked for 30 minutes)
  • 1 onion (sliced)
  • 1 tomato (chopped)
  • 1 teaspoon minced garlic
  • 1 teaspoon minced ginger
  • 1 teaspoon garam masala
  • ½ teaspoon cumin powder
  • ½ teaspoon coriander powder
  • ½ teaspoon turmeric powder
  • ½ teaspoon chili powder (optional)
  • 1.5 cups chicken broth
  • ½ teaspoon salt
  • 2 tablespoons olive oil or ghee
  • Fresh coriander and mint leaves (for garnish)

🔥 Instant Pot Cooking Method

1️⃣ Prepare the Chicken Marinade

  • In a bowl, mix the chicken with yogurt, garlic, ginger, spices, and lemon juice. Let it marinate for 30 minutes to 1 hour.

2️⃣ Sauté the Onion

  • Set the Instant Pot to Sauté mode. Add olive oil (or ghee) and sauté the onion until golden brown.
  • Add minced garlic and ginger, sauté for another 1–2 minutes.

3️⃣ Cook the Chicken

  • Add the marinated chicken to the pot and sauté until it’s browned on all sides (about 3-4 minutes).
  • Add tomato, garam masala, turmeric, cumin, coriander powder, and sauté for another 2 minutes.

4️⃣ Add Rice and Broth, Then Pressure Cook

  • Spread the soaked basmati rice evenly over the chicken (do not mix).
  • Pour in the chicken broth.
  • Close the lid and set the Instant Pot to Pressure Cook mode on High for 6 minutes.
  • After cooking, allow for a Natural Release for 10 minutes, then release any remaining pressure manually.

5️⃣ Finish and Mix

  • Open the lid, and garnish with fresh coriander and mint leaves.
  • Gently fluff the rice with a fork, ensuring the rice stays intact and doesn’t break apart.

🍽️ How to Serve

Serve with yogurt raita (Indian yogurt sauce)
Add a squeeze of lemon for extra freshness
Top with nuts (cashews, almonds) or raisins for added flavor

💡 Instant Pot Biryani Tips

  • Using chicken thighs results in a more tender and juicy texture.
  • Make sure to layer the rice and chicken separately so the rice doesn’t become mushy.
  • For a deeper flavor, add saffron soaked in warm water on top of the rice.
