Ingredients (Serves 4)

  • 2 cups (240g) all-purpose flour
  • 2 tsp baking powder
  • 1 tsp baking soda
  • 2 tbsp sugar
  • ½ tsp salt
  • 2 cups (480ml) buttermilk
  • 2 large eggs
  • 4 tbsp melted unsalted butter
  • 1 tsp vanilla extract (optional)

Instructions

  1. Mix the Dry Ingredients
    In a large mixing bowl, whisk together the flour, baking powder, baking soda, sugar, and salt.

  2. Prepare the Wet Ingredients
    In a separate bowl, whisk together the buttermilk, eggs, melted butter, and vanilla extract.

  3. Combine Wet and Dry Ingredients
    Gently fold the wet mixture into the dry ingredients until just combined. Do not overmix—it's okay if there are a few lumps!

  4. Cook the Pancakes
