🍽️ Ingredients for Chicken Breast Fried Rice (Serves 2-3)
- 1 cup chicken breast (diced)
- 2 cups cooked rice (preferably cold or leftover rice)
- 1/2 cup peas (fresh or frozen)
- 1/4 cup carrots (diced)
- 1/4 cup green onions (chopped)
- 2 tbsp soy sauce
- 1 tbsp sesame oil
- 1 tbsp vegetable oil
- 2 cloves garlic (minced)
- Salt and pepper to taste
- 1/2 tsp chili powder (optional)
👩🍳 Instructions for Making Chicken Breast Fried Rice
1. Prepare the Chicken Breast
- Cut the chicken breast into small pieces. Heat the pan with a little vegetable oil and cook the chicken until fully cooked.
2. Prepare the Rice
- If using leftover rice, break up any clumps with a fork. Cold rice works best for fried rice as it’s less sticky and fries better.
3. Stir-fry the Vegetables
- In the same pan, heat vegetable oil and sauté minced garlic, carrots, and peas for 2-3 minutes until tender.
4. Add the Chicken
- Add the cooked chicken breast to the pan with the vegetables and stir-fry together until fully combined.
5. Fry the Rice
- Add the prepared rice to the pan and stir well. Pour in the soy sauce and sesame oil, and add chili powder if you like it spicy. Stir-fry for 3-4 minutes until everything is well combined and heated through.
6. Garnish & Serve
- Serve the fried rice in bowls and garnish with chopped green onions. Serve hot!
