Two chickpea salad ideas.
1. Mediterranean Chickpea Salad
- Ingredients: Chickpeas (canned or cooked), cucumber, tomato, red onion, parsley, feta cheese, olives, lemon juice, olive oil, salt, pepper
- Instructions:
- Rinse the chickpeas and chop the cucumber and tomato into bite-sized pieces.
- Thinly slice the red onion and olives.
- Add all ingredients to a large bowl, and crumble feta cheese over the top.
- In a small bowl, whisk together olive oil, lemon juice, salt, and pepper for the dressing and drizzle it over the salad.
2. Spicy Avocado Chickpea Salad
- Ingredients: Chickpeas, avocado, tomato, cilantro, lime juice, chili pepper, olive oil, salt, pepper, cumin
- Instructions:
- Rinse the chickpeas, then dice the avocado and chop the tomato.
- Slice the chili pepper and combine it with the cilantro and chickpeas.
- In a small bowl, mix lime juice, olive oil, salt, pepper, and cumin for the dressing, then toss it all together.
